You guys love my salads, and this one just does not disappoint!! Grab all your favorite greens, because this salad is loaded with all sorts of them! I used a delicious combination of crunchy goods for the base: green cabbage, romaine lettuce, Persian cucumbers, fresh dill, scallions, and some roasted salted pumpkin seeds.

1.First, lets work on that base. I used half a head of a green cabbage, a handful of dark romaine lettuce, 4 Persian cucumbers, a handful of fresh dill, 3 green scallion, and about 1/3 cup of roasted salted pumpkin seeds. As with any of my other salads, feel free to substitute out anything you dont like – you do you.

2.For the dressing, grab a small food processor or blender, then add 1 small avocado pitted, 2-4 cloves garlic, juice from 2-3 limes (start with 2, then add more if you’d like it more liquidy/more citrusy later), 1/8 cup cashew (optional), handful of cilantro, a few fresh chives, sea salt, 2-3 tablespoons of a high quality olive oil (I used @wearebrightland – i recently got hooked on their olive oil), then add sea salt, fresh ground pepper, blend. Give it a taste, then add more of what you like. You can always add more lime juice to lighten it up. Almost always, you’ll want to add a bit more salt and lime juice, but again, go light then you can add more to taste.

3.Pour the dressing over the salad, toss it like a champ, then serve this up … with salads like this, I love them so much I just end up eating them as a whole meal. Feel free to add chicken/shrimp for protein and this will be bliss.
