Healthy broccoli, lemon and cashew cream pasta

- 450g of gluten-free pasta
- 300g of broccoli
- 110g of cashew cream
- 30g of vegan parmesan cheese
- 2 tsp lemon zest
- 1 tablespoon of lemon juice
- salt
- pepper
Instructions
- Cook pasta according to package directions. At two minutes of cooking, reserve 60 mL of cooking water and add the broccoli
- Cook for the remaining two minutes, then drain the pasta and broccoli and return to the pot
- Add remaining ingredients and mix. Season with salt and pepper
- Enjoy
