Healthy broccoli, lemon and cashew cream pasta

  • 450g of gluten-free pasta
  • 300g of broccoli
  • 110g of cashew cream
  • 30g of vegan parmesan cheese
  • 2 tsp lemon zest
  • 1 tablespoon of lemon juice
  • salt
  • pepper


  1. Cook pasta according to package directions. At two minutes of cooking, reserve 60 mL of cooking water and add the broccoli
  2. Cook for the remaining two minutes, then drain the pasta and broccoli and return to the pot
  3. Add remaining ingredients and mix. Season with salt and pepper
  4. Enjoy
