Recipe of scallops, tomato water and lemon healthy for 2 persons

  • 6 scallops without shell or coral
  • 250g of ripe tomatoes
  • 15 mL olive oil
  • Mint (for decoration)
  • 1 lemon
  • salt
  • pepper


  1. Coarsely chop the washed tomatoes
  2. Place them in a fine sieve over a bowl
  3. Add salt to the tomatoes and mix vigorously. Let stand for 30 to 45 minutes, stirring from time to time
  4. Squeeze the tomatoes well at the end of this time. Try to leave only the skin and seeds in the strainer
  5. Heat a little olive oil in a crepe pan or non-stick pan
  6. Season the scallops and place them in the pan
  7. Cook over medium-high heat for a few minutes, until golden on both sides (about 1 minute on each side)
  8. In soup plates, cover the bottom with tomato water.
  9. Divide the scallops and add a few drops of olive oil, the lemon juice and the mint leaves (optional)
  10. Taste
